- 1 cup (200g) uncooked long-grain white rice
- 10 ounces (280g) frozen broccoli florets, thawed and drained
- 2 cups (200g) shredded sharp cheddar cheese, divided
- 1 can (10.5 ounces / 300g) condensed cream of mushroom soup
- 1/2 cup (120ml) milk
- 2 tablespoons (30g) melted butter, divided
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 cup (50g) crushed Ritz crackers
- 1 tablespoon (15g) melted butter for topping
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter or cooking spray.
- In a large mixing bowl, combine uncooked rice, thawed broccoli, cream of mushroom soup, milk, 2 tablespoons melted butter, garlic powder, and onion powder. Stir until well mixed.
- Stir in half of the shredded cheddar cheese, reserving the other half for the topping.
- Pour the mixture into the prepared baking dish and spread evenly.
- In a small bowl, mix the crushed crackers with the remaining 1 tablespoon melted butter until it resembles wet sand. Sprinkle evenly over the casserole and press down slightly.
- Bake for 45-50 minutes, or until the top is golden brown and the rice is tender.
- Remove from oven and let rest for 10 minutes before serving to allow the sauce to thicken.
Notes
Thaw and drain broccoli well to prevent sogginess. Shred your own cheese for better melting. Let the casserole rest for 10 minutes after baking to allow the sauce to set. Can be assembled up to 24 hours in advance and refrigerated before baking.
