  • Author: Julia
  • Total Time: 2 hours 15 minutes
  • Yield: 12 servings 1x

Description

Soft, gooey cinnamon rolls layered with buttery caramel and toasted pecans, perfect for weekend breakfasts or holiday brunches. This recipe is easy to follow and yields indulgent, crowd-pleasing rolls with a rich caramel glaze.

Ingredients

Scale
  • 3 ½ cups (440g) all-purpose flour
  • 2 ¼ teaspoons (1 packet) active dry yeast
  • 1 cup (240ml) whole milk, warmed to about 110°F (43°C)
  • 6 tablespoons (85g) unsalted butter, softened and melted
  • ½ cup (100g) granulated sugar
  • 1 cup (220g, packed) brown sugar, preferably dark
  • 3 tablespoons ground cinnamon
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 ½ cups (150g) pecans, roughly chopped and toasted
  • ½ cup (60g) powdered sugar (for finishing glaze)
  • Additional milk or cream for glaze

Instructions

  1. Warm milk to about 110°F (43°C). Sprinkle yeast over milk, stir lightly, and let sit for 5 minutes until foamy.
  2. In a large bowl or mixer, combine flour, granulated sugar, cinnamon, and salt. Add softened butter, eggs, vanilla, and yeast mixture. Mix until dough forms.
  3. Knead dough by hand or with dough hook for 8-10 minutes until smooth and elastic. Add flour if too sticky.
  4. Place dough in greased bowl, cover, and let rise in a warm spot until doubled in size, about 1 to 1 ½ hours.
  5. While dough rises, melt 4 tablespoons butter in saucepan. Stir in brown sugar and vanilla, heat until smooth caramel-like but not boiling. Toast pecans in dry skillet over medium heat for 3-5 minutes until fragrant.
  6. Punch down dough and roll out on floured surface into 12×18-inch rectangle.
  7. Brush dough generously with melted butter, sprinkle cinnamon sugar mixture evenly, then scatter toasted pecans on top.
  8. Roll dough tightly from long edge into a log. Slice into 12 even rolls using a sharp knife or dental floss.
  9. Place rolls cut side up in greased 9×13 inch baking dish, leaving space between each.
  10. Cover loosely and let rise again until puffy but not doubled, about 30-45 minutes.
  11. Preheat oven to 350°F (175°C). Bake rolls for 25-30 minutes until golden brown and caramel is thick and sticky.
  12. While warm, drizzle rolls with glaze made from powdered sugar and milk or cream. Optionally spoon leftover caramel over the top. Serve warm.

Notes

Do not rush the dough rises to ensure soft, fluffy rolls. Toast pecans to enhance flavor and crunch. Use real unsalted butter for best richness. Rolls can be made ahead and refrigerated overnight before baking. Avoid freezing after baking to prevent caramel glaze separation. Reheat gently to restore freshness.
