  • ½ cup (120ml) buttermilk (or ½ cup milk + 1 tablespoon lemon juice or vinegar, let sit 5 minutes)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch Bundt pan or tube pan thoroughly with butter or non-stick spray, then dust lightly with flour.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt until evenly combined.
  3. In another bowl, whisk the melted butter and granulated sugar until smooth and slightly glossy. Add eggs one at a time, whisking well after each addition.
  4. Stir in vanilla extract, then apple cider and buttermilk. The mixture will be thin and liquidy.
  5. Pour the wet ingredients into the dry ingredients and gently fold with a rubber spatula until just combined. Do not overmix.
  6. Pour batter into prepared pan and smooth the top. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
