  • 2 cups (340g) semi-sweet chocolate chunks
  • Flaky sea salt (like Maldon), for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Spread pecans on a baking sheet and toast for 5-7 minutes until fragrant. Let cool completely, then chop into rough pieces.
  2. Melt butter in a large saucepan over medium heat. Cook, stirring constantly, until milk solids turn golden brown and it smells nutty (about 5-7 minutes). Pour into a heatproof bowl and cool for 15-20 minutes until warm but not hot.
  3. In a large bowl, whisk the cooled brown butter, brown sugar, and white sugar until smooth and glossy (about 2 minutes).
  4. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.
  5. In a separate medium bowl, whisk together flour, baking soda, and salt.
  6. Gradually add dry ingredients to wet ingredients. Mix with a spatula until just combined. Do not overmix. Fold in chopped pecans and chocolate chunks.
  7. Cover the bowl with plastic wrap and refrigerate for at least 24 hours (up to 72 hours).
  8. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  9. Scoop dough into 2-tablespoon balls and place on sheets, spaced 2 inches apart.
